
You bought the nonstick pan so eggs would slide right off. Then one day, an egg stuck. Then a pancake. Then everything. More butter and oil didn’t help—eventually, a new pan became the only solution.
The frustrating part wasn’t misuse. The pan wasn’t dropped or scrubbed with steel wool. It was washed by hand, just as the instructions advised. Yet the nonstick coating disappeared in about two years, sometimes sooner.
The habit that feels normal—but isn’t
Most home cooks turn the burner to medium-high or high when starting to cook. It’s how many were taught: heat the pan quickly. That approach works for cast iron or stainless steel, but nonstick pans require a different method.
The slick surface is a thin layer of PTFE, commonly known as Teflon. A 2024 study in the Journal of Materials Research and Technology found this coating remains stable only up to about 500°F (260°C). Exceeding that temperature causes it to degrade.

Consumer Reports has tested these pans for years. Their research shows heat and rough handling wear out the coating faster than almost anything else. Once damaged, the pan doesn’t warn users—it just becomes less effective over time until food sticks.
What happens when nonstick gets too hot
When PTFE overheats, it releases fumes that can cause polymer fume fever, sometimes called “Teflon flu.” Symptoms include chest tightness, coughing, headache, and chills. The illness resembles a bad cold or flu and typically resolves within a few days.
America’s Poison Centers recorded 267 suspected cases in 2023, the highest number since 2000. Over the past two decades, U.S. poison centers have documented more than 3,600 such incidents. These cases aren’t limited to factories—they occur in ordinary kitchens while people prepare meals.
Emergency medicine physician Dr. Darien Sutton explained to reporters that the illness results from inhaling fumes from overheated nonstick pans. Medical professionals continue studying the long-term effects of repeated exposure.

The issue isn’t carelessness. It stems from an assumption that nonstick pans should be treated like any other cookware. That single habit shortens the coating’s lifespan by months or years.
The problem isn’t dish soap, sponges, or dishwashers. Even metal spatulas cause scratches, but the primary cause is simpler: using high heat. Preheating an empty nonstick pan, a common practice for searing, is particularly damaging.
Nonstick pans aren’t designed for high heat. They work best for low and slow cooking—eggs, pancakes, or delicate fish. For high-heat searing, stainless steel or cast iron are better choices.
A few simple adjustments can extend a pan’s life without requiring expensive tools or advanced skills.

- Cook on low or medium heat. High settings should be avoided. Both Consumer Reports and Healthline advise keeping the burner at medium or below.
- Avoid preheating an empty nonstick pan. Add oil or butter before turning on the heat, or immediately after placing the pan on the burner. The fat absorbs heat, preventing the coating from drying out. T-Fal, a major nonstick brand, includes this warning in its care instructions.
- Use soft utensils and avoid stacking pans without protection. Wooden spoons, bamboo turners, and silicone spatulas are inexpensive and prevent scratches. A 2022 study in Science of the Total Environment, cited by the NRDC, found that scratched nonstick coatings can release tiny particles into food. When storing pans, place a dish towel or paper towel between them to prevent damage.
Even with proper care, nonstick pans don’t last indefinitely. Consumer Reports has long noted that while cast iron can last a lifetime, nonstick coatings wear out. Most pans last two to five years. Using high heat reduces that lifespan and risks exposing the kitchen to harmful fumes.
Next time you use a nonstick pan, keep the heat at medium or lower. The pan performs best with gentle heat, and treating it that way ensures slippery eggs for years to come.
