
About 70% of home cooks in the U.S. rinse raw chicken before cooking, continuing a generational habit. Food safety experts warn the practice does more harm than good.
It doesn’t remove bacteria. Salmonella and Campylobacter, two leading causes of food poisoning, stick to chicken skin. Water doesn’t wash them away but turns them into an invisible spray that travels up to three feet in every direction.
The invisible spray you can’t unsee
A 2019 U.S. Department of Agriculture study found that 60% of people who rinsed raw chicken contaminated their sink. Even after cleaning, 14% still had traces left. More concerning, 26% transferred bacteria from the chicken to ready-to-eat food like salad during the same meal.
Drexel University researchers measured how far the spray spreads. Bacteria from rinsed chicken can land on faucet handles, countertops, spice jars, and even fruit bowls. A U.K. study found droplets reaching up to 28 inches from the sink—far enough to contaminate almost anything within reach.
The sink becomes a hidden source of germs. Leftover bacteria can remain even after washing, turning the next rinse—whether for grapes or lettuce—into a cross-contamination risk. For the one in four cooks who spread germs to their salad, the effects are real. These bacteria cause nearly 2 million illnesses in the U.S. each year, with Salmonella alone responsible for about 420 deaths annually.
Why the habit persists—and how to break it
Rinsing chicken started when poultry arrived less processed, sometimes with visible blood or feathers. A quick rinse made sense then. Today’s chicken, however, is cleaned multiple times before reaching stores. What once helped now spreads the bacteria it was meant to remove.

Health authorities like the USDA, CDC, and FDA recommend a safer method. It takes less than a minute and removes the risk of spraying germs. The steps are simple: skip the rinse, pat the chicken dry with a paper towel and discard it, wash hands with soap for 20 seconds, and sanitize any surfaces the raw meat touched. Cooking to 165°F (74°C), checked with a meat thermometer, is the only sure way to kill bacteria.
If the chicken has debris, like a feather, wipe it with a damp paper towel and throw it away. If it smells bad or looks spoiled, no rinse will make it safe. The USDA notes that lemon juice, vinegar, or saltwater rinses don’t kill bacteria—they just create the same spray issue as plain water.
The change feels odd. Rinsing is tied to a sense of cleanliness. But the science shows the sink is where the real danger starts. The alternative isn’t hard—just unfamiliar.
