
Home coffee drinkers often blame bad beans or dull grinders for a flat, bitter cup, but the issue might actually be sitting on their counter. According to the National Coffee Association, 66% of American adults drink coffee every day, and most make it at home. This daily habit creates a setup where a clean-looking machine quietly ruins the flavor profile.
Coffee is roughly 99% water, making the water quality the single most important factor in the final cup. As water travels through the narrow tubes, heater, and tank, it leaves behind microscopic residue. Over time, this buildup creates a thick film that coats fresh grounds before the coffee even reaches the pot. A 2011 study by NSF International found that about 50% of home coffee makers tested positive for yeast and mold in their tanks. In fact, the study found that home machines were dirtier on average than the average toilet seat. Lisa Yakas, a product safety expert at NSF, noted that coffee makers stay warm and wet, which is exactly what mold needs to thrive.

While the tank hosts mold, the brew basket is the home of rancid oils. Every brew leaves a thin layer of coffee oil behind. Over a day or two, this oil reacts with the air and goes stale, creating a sharp, bitter taste that lingers in the throat. This flavor masks the delicate notes of even high-quality beans.
The hidden mineral layer
Hard water adds another layer of complexity to this problem. The U.S. Geological Survey estimates that 85% of American homes have hard water, meaning the tap contains a high concentration of dissolved minerals like calcium. When the machine heats this water, those minerals stick to the inside of the heater and water lines. This crusty mineral buildup acts like a thermal insulator. Heat cannot pass through the mineral layer quickly enough to bring the water to the proper temperature. The Specialty Coffee Association states that coffee should be brewed between 195°F and 205°F to extract the correct flavors. When the heater is coated in minerals, the water pouring over the grounds cools down, resulting in a sour, weak cup. One reviewer noted that a machine with heavy buildup was brewing espresso at 172°F, which is more than 20 degrees below the industry standard.

This temperature drop is especially frustrating because the machine still looks and feels normal. The water still flows, and the coffee still drips. It creates a disconnect where the equipment seems functional but produces subpar results. For the average household, the frustration is compounded by the fact that the solution requires only three minutes of effort and a small amount of cleaning solution. A monthly deep clean removes the mineral scale and washes away the rancid oils, restoring the machine to a state where fresh beans can shine. It turns out that the culprit wasn’t the roast or the brand, but simply a buildup that could be scrubbed away.
The right way to clean it
Most major brands, including Keurig, Nespresso, Breville, and DeLonghi, warn against using plain white vinegar, as it can damage rubber seals and void warranties. Instead, they recommend using a manufacturer-specific descaling solution or food-grade citric acid powder mixed with water. A common recipe calls for one tablespoon of citric acid per quart of water. The process involves running a cycle with the solution, pausing it to let the solution sit and dissolve the buildup, then rinsing thoroughly with clean water. Removing the water filter cartridge before starting is also a necessary step. Once the machine is clean, washing the removable parts by hand handles the oily residue. Doing this once a month, or every two to three months in soft water areas, ensures the machine delivers the flavor the beans deserve.
